Make the Cream Cheese Batter

Whip the Meringue
In a separate clean bowl, beat the egg whites with the cream of tartar until foamy. Gradually add half of the sugar, continuing to beat until soft peaks form, then continue whipping until stiff, glossy peaks form.
Fold and Bake
Gently fold about a third of the meringue into the cream cheese mixture to lighten it, then carefully fold in the remaining meringue in two additions, being careful not to deflate the mixture too much.
Pour the batter into the prepared pan, smoothing the top. Place the pan into a larger roasting pan and pour hot water into the roasting pan until it reaches about halfway up the sides of the cake pan.
Bake at 320°F (160°C) for 60-70 minutes, until the top is golden and the cake springs back gently when touched. Turn off the oven and let the cheesecake sit inside with the door slightly ajar for 10-15 minutes to prevent sudden temperature shock, which can cause it to collapse.
