For the Steak:
- 4 beef cube steaks or top round steaks 6 ounces each
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 2 tbsp olive oil
For the Sauce:
- 1 large yellow onion sliced into strips
- 3 garlic cloves minced
- 1 can 28 ounces crushed tomatoes
- ½ cup beef broth
- 1 tsp dried oregano
- ½ tsp red pepper flakes optional
- 1 tbsp tomato paste
- Salt and pepper to taste
- Fresh parsley chopped
- 2 tbsp olive oil
Season and Sear the SteaksPat the steaks dry, season both sides with salt, black pepper, and garlic powder, then sear in hot olive oil for 2–3 minutes per side, working in batches if needed, until a deep golden crust forms. Set aside. Build the Tomato SauceIn the same skillet, cook the onions until soft and lightly golden, about 4–5 minutes, then add the garlic for 30 seconds. Stir in the crushed tomatoes, beef broth, oregano, tomato paste, and red pepper flakes, and let simmer for a few minutes. Simmer the Steaks and FinishNestle the steaks back into the sauce, cover, and simmer on low for 15–20 minutes until tender. Sprinkle with fresh parsley before plating.
- Pound the steaks to an even thickness before seasoning so they cook evenly, and avoid crowding the pan while searing so the crust develops properly.
- Let the sauce simmer uncovered for a few minutes before adding the steaks back in to help it thicken.
- A pinch of red pepper flakes adds gentle warmth without making the dish spicy, and fresh parsley at the end brightens the whole plate.
