Ingredients
  

  • 3 large ripe bananas mashed (about 1 1/2 cups)

  • ¾ cup semi sweet chocolate chips plus extra for topping

Instructions
 

  • Mash the Bananas and Combine the Wet Ingredients
    In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth with a few small lumps remaining. Whisk in the eggs, vegetable oil, and vanilla extract until fully combined, then stir in the brown sugar until the mixture looks glossy and evenly blended.

  • Combine the Dry Ingredients and Fold Everything Together
    In a separate bowl, whisk together the rolled oats, all purpose flour, baking soda, baking powder, cinnamon, and salt.
    Add the dry mixture to the wet banana mixture and fold gently with a spatula just until the flour disappears, then fold in the chocolate chips.

  • Fill the Muffin Tin and Bake
