Ingredients
  

For the Salad:

  • 6 cups romaine lettuce shredded
  • 4 cups Napa cabbage shredded
  • 2 cups red cabbage shredded
  • 2 cups cooked chicken breast sliced or shredded
  • 1 cup carrots julienned
  • 1 cup edamame shelled
  • 1 cup crispy wonton strips
  • ½ cup sliced almonds toasted

  • ¼ cup green onions sliced
  • 2 tsp sesame seeds toasted

For the Dressing:

  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp fresh ginger grated
  • 2 garlic cloves minced

Instructions
 

  • Cook the Chicken and Prep the Vegetables
    Season the chicken breasts and grill or pan sear them over medium high heat for five to six minutes per side, until fully cooked and lightly charred. Let the chicken rest for a few minutes before slicing.
    While the chicken cooks or rests, shred the romaine lettuce, napa cabbage, and red cabbage, then julienne the carrots and set everything aside.

  • Whisk the Dressing and Toss the Salad
    In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic until smooth and glossy.
    In a large mixing bowl, combine the shredded lettuce, cabbage, carrots, and edamame, then pour the dressing over the top and toss well with tongs until everything is evenly coated.

  • Top and Garnish the Salad
    Transfer the dressed salad to a large serving bowl and arrange the sliced chicken over the center.
