Ingredients
  

  • 1 medium green cabbage about 2 lb / 900 g, cut into 1-inch thick slices
  • 3 tbsp olive oil
  • 2 tbsp melted butter
  • 3 garlic cloves minced
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ¾ tsp kosher salt adjust to taste
  • ½ tsp freshly ground black pepper
  • 1 tbsp fresh thyme leaves
  • 2 tbsp chopped fresh parsley
  • 1 tbsp lemon juice
  • 2 tbsp grated Parmesan optional

Instructions
 

  • Slice, Mix, and Brush the Cabbage
    Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper. Slice the cabbage into 1-inch thick steaks, cutting straight through the core so each slice holds together as one piece. In a small bowl, whisk together the olive oil, melted butter, minced garlic, smoked paprika, garlic powder, salt, and black pepper.
    Arrange the cabbage steaks in a single layer on the prepared baking sheet and, using a pastry brush, generously coat both sides of each steak with the garlic butter mixture, working it into the layers. Sprinkle the fresh thyme leaves over the top.

  • Roast and Flip
    Transfer the baking sheet to the oven and roast for 20–25 minutes. Flip each steak carefully with a spatula, brushing on any remaining garlic butter mixture, then continue roasting for another 15–20 minutes, or until the edges are deeply blistered and caramelized and the centers are fork-tender.
    For an extra-charred finish, switch the oven to broil for the final 2–3 minutes, watching closely so the edges don't burn.

  • Brighten and Serve
    Remove the cabbage steaks from the oven and immediately drizzle with the lemon juice while still hot. Sprinkle with chopped parsley and grated Parmesan, if using, and serve right away while the edges are still crisp and the centers are warm and tender.

  • Choose a firm, tightly packed head of green cabbage; it holds together best when sliced into steaks.
