Season the Brisket

  • Pat the brisket dry with paper towels, then trim any excess large pockets of fat, leaving a thin layer intact to help keep the meat moist during cooking. In a small bowl, combine the brown sugar, paprika, kosher salt, black pepper, garlic powder, onion powder, and cayenne pepper if using.
  • Rub the seasoning mixture generously all over the brisket, pressing it into the meat on all sides so it adheres well, then let the seasoned brisket sit at room temperature for about 20-30 minutes while the oven preheats, which helps it cook more evenly.

Cook Low and Slow

  • Preheat the oven to 300°F (150°C). Place the sliced onion in the bottom of a large roasting pan, then set the seasoned brisket fat-side up on top of the onions. Pour the beef broth and Worcestershire sauce into the bottom of the pan around the brisket, being careful not to wash the seasoning off the meat.
