Equipment

  • Mixing bowls
  • whisk
  • Spatula
  • standard loaf pan
  • wire rack

Ingredients

Wet ingredients

  • 3 ripe bananas mashed (about 1½ cups)
  • ½ cup plain or Greek yogurt
  • ½ cup unsalted butter melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup granulated sugar

Dry ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon optional

Instructions

  • Mash the bananas and mix the wet ingredients
Mash the ripe bananas in a large bowl until mostly smooth, leaving a few small chunks if you like texture.
Add the yogurt, melted butter, egg, and vanilla extract, then whisk until smooth with no streaks remaining.

  • Combine the dry ingredients and fold the batter together
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon if using, until evenly combined.
Pour the dry ingredients into the wet mixture and gently fold together just until no streaks of flour remain. A few small lumps are fine.

  • Pour, bake, and cool
Grease a standard loaf pan, pour in the batter, and smooth the top. Bake at 350°F for 55 to 65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
Let the loaf cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Do not overmix the batter once the flour is added, since this is the main cause of a dense loaf.
  • Use very ripe, heavily speckled bananas for the best sweetness and flavor.
  • Let the loaf cool before slicing to avoid a gummy center.
  • If using thick Greek yogurt, stir in a tablespoon of milk to help it mix in more easily.
  • Store extra yogurt tightly sealed, since it works well stirred into oatmeal or smoothies too.
